Cauliflower Gratin Recipe
2 small cauliflowers heads, cut into bite-size pieces
2 tablespoons coconut oil
4 garlic cloves, chopped
1 large onion, chopped
½ cup cashews
3 tablespoons of nutritional yeast
1 tablespoon dried mustard powder
Pinch of nutmeg
1 cup water
1 cup of panko breadcrumbs
Salt and ground black pepper to taste
2 tablespoons chopped parsley (for garnish; optional)
Instructions
Preheat oven to 375º F.
Place the cauliflower into a large pot and cover with water and salt. Bring to a boil over high heat, and then reduce heat to medium-low, cover, and simmer until fork-tender, 5 to 7 minutes. Drain and allow dry for a minute or two; chop into bite-size pieces. Set aside one cup of cauliflower for the sauce.
Heat coconut oil over medium heat; add garlic and onion sauté for 5-7 mins.
For sauce: add cauliflower, onion, garlic, mustard powder, nutmeg, cashews, nutritional yeast, salt, pepper and water in a blender; pulse until mixture forms a fine paste. Set aside.
In an ovenproof dish, place cauliflower; cover with sauce and top with breadcrumbs.
Bake at 375 for 30 minutes. Broil for one min or until breadcrumbs are lightly browned. Garnish with parsley.
